You’re correct. Its on that link above. Trace it to what you have and there will be a GCWR, its one of the first ratings. That site also tells you recommended max tow capacities.
There is also a handy yellow sticker on the trucks door jamb. Its your payload, from what I understand its your registered GVWR minus the empty weight of the truck. This is what you can legally haul in the truck itself.
So I have a F350, KR CCSB.
I only see the GVWR on the white sticker. It is 11500, but I don't see any GCWR.
To find the GCWR for towing a travel trailer with your 2019 F350 CCSB (Diesel 4x4?) take a look at page 24 in the RV Guide. It looks like your truck’s GCWR is 28,700 lbs., but you’ll never get there due to the 15K lbs. limit for the trailer (probably a limitation of the 2-1/2” receiver.)
See page 35 for the gooseneck / fifth-wheel specs; you’ll probably find the same 28,700 lbs. GCWR spec. However, the fifth-wheel weight limit is 18K lbs., so it may still be tough to hit 28,700 when you add the trailer’s pin weight to the truck’s payload.

So we don’t guess, what are the details of your truck.
Diesel or Gas?
What does the yellow door sticker state for Max combined never exceed cargo weight?

Your truck weight limiting specs are the exact same as my 2019 Lariat CCSB Diesel w/18” wheels
28,700 GCWR lbs (with either 3.31 or 3.55 axle and 11,500 GVWR rating)
15,000 lbs Max trailer loaded weight (conventional trailer)
20,800 lbs max gooseneck towing (with either 18” or 20 tires and Gooseneck)
18,000 lbs Max with 5th wheel towing
Look at your white door sticker and your Rear GAWR (axle rating) should be 7230 lbs
Your Front axle rating will be anything from 5200, 5600 or 5990 lbs depending on if you have standard, HD or snow plow springs
