Did you ever consider checking the coolant at each one of those stages? Having lost an engine due to the ford dealer not filling the cooling system I will never leave a service without doing my own functional pre trip inspection.

I did. The day after I got truck back from shop I towed TT about 300 miles, then spent 7 days driving around in the mountains on gravel, much of it in 4x4. Then towed home.
I checked coolant and oil during this time, as it did smell warm, but assumed it was because of new parts. Coolant and oil level were fine.
If it was full when you picked it up you did your due diligence. I would bet there is a coolant leak at the turbo after the repair. Take a look for white residue through the wheel well.
