I have a 72 F250 with the I6 300. A previous owner replaced the carb with a Fittech 400 EFI and ran a new 2-wire sensor from the original coolant temp location (passenger side, back, near the manifold) into the Fittech.
Runs great but the temp gauge in the cab doesn't work because it's got no input anymore.
Anyone know if I can I mount a third party temp sensor somewhere else to drive the stock gauge? Any guidance on how to do it?

You sir, are in the 1994.5-1997 7.3 Power Stroke Diesel portion of the forum. Good luck working on your ride.
First, yes you can just add a Tee to the port and run both sensors. There are probably other dead ports you can use but I do not know if/where they are. I know my v8 has a couple of options depending on motor options.
second, @tjc transport can you help him get pointed in the correct direction for the right forum?
