Mine did the same thing recently, and started doing the countdown. It still showed it being 94% full on my edge CtS. I went and added almost 2.5gallons of DEF and it went to 98% full and the count down went away.
I think sometimes these trucks get confused since they are trying to infer the current DEF level based on when it was last filled and how many miles have elapsed. I think the previous time I over filled it, as it was parked in the driveway with the front facing upslope.
Try adding DEF until it is actually full and the message will go away.

You can remove the DEF level from your display as Ford does NOT use any sort of graduated/accurate sensor to measure the remaining DEF in the tank. I tried to use CTS/CTS2 to monitor the DEF level once, The CTS/CTS2 showed 66% remaining when it was over half empty and doing the 500 mile count down.
If you look at the DEF sensor, you will see 4 rods/anodes/conductors. One rod is a common conductor for the other 3 rods/anodes/conductors. They measure the DEF level so the PCM can compute the level, full, ok, under half full and when to give the 500 mile count down.
jbsfarms - Many people run the DEF level in the tank down til the count down starts before they add DEF.
I had this happen to my truck and I added DEf and the countdown wouldnt go away. i unhooked the battery and that made no difference. I thought I would have to go to the dealer but it went away with about 100 miles till limp mode. Never had any problem since. ZJust keep driving and it should go away on it's own. If you get below 100 miles than take it in.
