Managed to get the truck moved out of the back of the lot and onto the concrete to work on it this past weekend, wasn’t successful in finding a pedal assembly though! It’s a lot harder finding any of these old trucks in the scrapyards then I thought it would be, they all seem to be full of old chevs!
Anybody reading this have one that they would be willing to part with?

It's not the easiest item to find. Although, I do see them at my local junk yard from time to time. Most trucks were automatics.

I’ve been on eBay looking but unfortunately being in Canada with the low dollar those 200$ assemblies cost me around 260$ plus close to 100$ shipping and 60-70$ duties paid on top of that.
and I just can’t bring myself to pay those kind of prices

I took it up and down the roAd and the sound is constant while the engine is running. Couldn’t tell if it was still happening while I was driving because of how loud the truck is but assume that it was. The sound doesn’t change at all when I’m in gear or not and if the clutch is pressed or not

Did re-use the automatic block spacer plate? If you did, the flywheel could be rubbing on the plate. Or it could be the starter if you are running the automatic starter. Or it could be something else.
If it was the clutch, throw out bearing or transmission it should change when you step in or let out the clutch pedal. A bad throw out bearing would be noisey when the clutch pedal is stepped in. A transmission should stop making the noise when you stepped in the clutch pedal. I've got a 4spd with a bad input shaft bearing. It's noisy when you let out the pedal. But stops making the noise when the clutch pedal is pushed down.
It's hard to tell exactly what it is without hearing it in person.

I did use the old spacer plate however it ive had it running multiple times and it only just started making thise noise recently, though I’ll take a look and see if this could possibly be what’s doing it,,

Did you replace the throw out bearing or is it a used one? It's the part that goes on the clutch fork. It could still be making the noise if your slave cylinder is applying too much pre-load. If this is the case then the throw out bearing is always in contact with the pressure plate fingers instead of lifting off them. But I would still expect at least the pitch of the noise to change as you step the pedal in or release it.

Is the transmission new/rebuilt? Or is it used?
On the throwout bearing, I had an unknowingly bad one that I reused, and it chirped and chattered when I let the clutch out and was whisper quiet, when I put the clutch in.
I had a new one that also made some noise (a little chirping) that came and went with the clutch pedal.
Both were a rather high pitched chirping noise, not a scratching/rubbing sound..
Even the bad one, right up until it completely grenaded inside the transmission (the only time I've ever had to be towed home), wasn't alarmingly noisy.
That's why I'm curious about the transmission itself. Maybe a bad bearing in the transmission is making noise.
Otherwise, a bolt that's not fully seated (although that'd be more of a knock), or something on the rotating assembly of the clutch/pressure plate that's offset and rubbing the inside of the bellhousing.
