Continuity is a good test, along with a visual and physical inspection. Look and check for any burnt or loose pins. When checking continuity, use the probes to wiggle both pins slightly to check for any possible breaks or damage inside the gasket.
Most of the valve cover gasket problems were on the OBS 7.3 motors. They mostly went away with this generation.

just a follow up for future readers, the valve cover gasket were bad. I bought a pair on ebay for $50. glad I did, was a simple solution and peace of mind considering the history of the truck is unknown
