If I remember correctly from when I pulled my engine. You can remove the drivers side motor mount with very little jacking on the engine. I think you will also have to drop the power steering pump as one of the bolts goes through the cooler/oil filter adaptor. You won't have to take any PS lines off. I wasn't doing the same thing you are so I can't be 100% sure but I think it should be easy to do (maybe not easy but not $500.00 difficult) .
My 1999 V10 required no jacking at all. There was lots of room. It should be 1-2 hour job. Drain the coolant, remove the coolant hoses, remove the oil filter, and the oil cooler screws off, (like an oil filter).
I did this job personally on my '01 V10. The oil passages from the block are in front of the motor mounts, so the tubes that carry it to and from the filter are sandwiched between the motor mount and frame. If it is the gasket in front of the motor mount, the engine haa to be raised, if it's the actual filter adapter, it can be removed with an allen wrench with nothing more than spinning off the filter and removing the coolant hoses.
I had to remove several things, mainly the throttle body and linkages in order to get it high enough. Also need to have the front tire removed. IIRC it took me a few hours just for removal, but I'm no pro and had minimal tools at the time. A pro should be able to do the whole thing in half a day, I would think.
For my 5.4, it’s the 4 nuts that hold the mounts to the frame and the throttle body has to come off. It helps to remove the engine fan or loosen the shroud, if you still have it. Pick the engine up with a cherry picker and a strap, or pull the alternator and use those bolt holes for the cherry picker chain.
If if you’re pulling up the motor, consider doing the oil pan and the dipstick tube at the same time, if they’re rusty
The OP said it was the filter adapter so there is NO need to jack up the motor. All he needs to do is remove the two coolant lines unscrew the adapter and install the new oring and then reinstall it all. He might loose all the coolant I'm not sure on that

In any of the parts listings I remember looking at, the long housing that is between the motor mount & frame rail is referred to as the "oil filter adapter", while the unit with 2 coolant lines & the actual place the oil filter spins on to is referred to as the "oil cooler". If the gasket to the "oil filter adapter" per the parts diagram is leaking, then yes the engine has to be raised. If the gasket/o-ring whatever it is (i dont remember) between the "adapter" and the "cooler" is leaking, then it's a super easy fix
