So my truck has always reported that it's getting roughly 15 mpg. This number factors in occasionally towing my 24' enclosed trailer weighing roughly 9k-10k lbs. I recently downloaded an app called Fuelio and when I fill up I input all the info in the app and it tracks everything. I just got my second fill up since downloading the app and it's returning an average MPG of that tank (unloaded) of 20 mpg. I just thought it was a nice surprise especially since I have a pretty heavy foot, it's not uncommon for me to hit 96mph. I recommend trying out the app, it's a good way to track fuel spending.
20 MPG average at highway speeds around 60 MPH is decent fuel economy for a 2017 Super Duty. That's about what my Super Duty Platinum FX4 is getting. I use the Fuelly app to track my fuel economy.
Daily driving with no towing I'm getting 16-17 mpg...towing our 15K pound toyhauler it drops to 9-10 mpg usually at 62-65 mph. I've peaked 19.1 on the 55 mph limit highways around here so mileage is better then what I expected for my daily use...towing is right at about what I expected. Very pleased with the fuel mileage on this 6.7 engine.
This is from a round trip to Northern WI for Labor Day weekend. Speeds were 80-83 on the way up and 73-75 on the way back. We came back on Tuesday, after the rush, and those out there weren't in much of a hurry to get home apparently.
Hand calculated, it came to 19mpg even. This is with three adults in the cab and all of our "stuff" in the box for a 4 day weekend. I am more than please with that and from what I've read, it should still improve slightly from that as I get more miles on it.

You sir are a master at getting good fuel economy. Mine would be 16-17 at best.
I typically use a debit card to buy fuel and just write the odometer reading on the receipt. After getting home, I post my debit in my checkbook register, and enter the fuel purchase data in an Excel spreadsheet which includes several formulae to calculate various aspects (days passed since last fill-up, MPG, average cost per gallon, etc.). The spreadsheet also includes a chart with a trendline which allows me to roughly forecast when I'll need to perform maintenance. Since this is my first diesel, I now save all those receipts in case I get a tank of bad fuel.
