I have had my VIN# for three weeks and I have not been able to get any updates on my F350.
I have entered my VIN# in ETIS and COTUS.
My salesman was able to give me a build date the last week of July and delivery second week of August.
What am I doing wrong?
I really would like to make sure my truck is being built with all of the options I wanted.

You're not doing anything wrong. My understanding is that you can't track an F350 via COTUS; we had the same issue when we ordered ours.
You may now be able to use your VIN to get your window sticker, which you can then use to check your truck's build configuration and estimate the build date. You'll need to check with your dealer and/or Ford customer service for shipping- and ETA updates.
Keep in mind that the factory is just now coming back from their 2 week summer vacation. Not sure if production is scheduled to start back up this weekend or Monday but that's something to think about. Also, when using ETIS, take what it says with a grain of salt. I have seen other guys post questions about why ETIS says their truck was built without a bumper or rear seatbelts. It should be pretty accurate but somethings can be a little mis-leading. Also, the only place I could get my window sticker to show up at is at the below link. If the link Jim provided doesn't work try this one.
Good luck and hang in there. Trust me I waited 1 day shy of 10 weeks from the time I first went in to my dealer but the wait is definitely worth it. I got a great deal and I only got what I wanted and nothing I didn't.
