Someone out there in the know please help me understand what the two canisters on the psngr side of the fenderwell are for?
On mine, the top can is totally disconnected from any hoses. I have a pic that I can send or post, but I couldn't figure out how to create a gallery.. and I'm running short on time this am..
Pics would help but if they look sorta like coffee cans they're vacuum reserve cans. One would be for the heater/AC controls and the other might be for the EGR system. If one is a plastic housing, it could be the EGR amplifier.

I disconnected mine. Just hook the vaccum line to a port on the intake or carb. Those vent doors for the heater and A/C will open with a quickness after that.

Those are your carbon purge canisters. If you have two, then one should have lines running to the gas tank and the other should run to the carb, assuming you aren't EFI, since your truck seems to be an '88 and so it probably isn't running a 351M or family member engine.
Both Chevy and Dodge vehicles from the 70's and 80's should have a similar setup.
I may stand corrected on the letter designation, but I could have sworn that I read mine should be a Modified, not the Windsor.
I've been a lifelong Chevy fan anyway, so I readily admit that I know very little about Fords, aside from the fact that this one is serving it's purpose..
I'll investigate more as to why I thought it was the 351m. It is, however the original motor in the truck, and it does have EFI. It is a 351. I know those two items for sure
There has never been an EFI 351M, and all 1988 Fords equipped with a 351 used the 351W.
A picture of the canisters you mentioned would be helpful, however as another user said you are likely referring to the EVAP system which is an evaporative emissions control system connected to the fuel tank and designed to control evaporative emissions from the tank.
Those two canisters look like they might be mufflers for the intake on the air pump/injection system. In front of the lower canister there is a hose with a spark plug clamped into the end. Where does that hose go? It looks like it came off the end of the upper can. When the anti-backflow valve fails, exhaust can blow back into the A.I.R. pump creating noise. Someone may have just blocked the hose off to make it quiet.
You should have three cans total 1 that looks like a coffee can 1 that is squared and 1 that is plastic and round
we will start with the last one first this is the intake for the smog pump it is designed to bring in fresh cool air in to mix with hot air off of the diverting valve for the egr and smog system. it also removes water from the system.
the square looking can lower area where your battery is is the fuel vapor canistor it removes fuel vapors from your fuel tank(s) and induces it into the intake manifold. it also condenses fuel back down and sends it back to the tank
last but least the old coffee can this is the vacuum amplifier ...also aka....vacuum resivoir....
I can't believe you saw that in the pic. I had to go back and look three times to see it and *I* took the picture! I'm pretty sure that the larger vacuum line that is disconnected comes from the inside (head side) of the lower can. I also seem to recall that one of the lines did pull a vacuum, but the hose is (obviously) disconnected.
All my A/C & Heat controls seem to work fine, and the engine runs pretty well. It does have a little miss to it. I'm planning on changing out the dis. cap/plugs/wires and adding possibly a MSD ignition. Also has a little exhaust manifold leak, the valve covers leak a very little bit, the front main (harmonic balancer pulley output shaft seal) leaks a little, and the steering box just started leaking.
I continue to find things that need attention with this truck, but I still like driving it. Maybe that's part of the 'feeling' you get about driving a Ford? I wouldn't know, I've only driven Chevy's and Hondas all my life. Well, one other Ford, a '73 4dr Maverick. My first car. Had a 302 and a C-4 3sd auto. Dad rebuilt the motor and tranny for my Christmas present that year. It had a l/s rear end I guess. Both tires would smoke well before one let loose....
