i've been eating real healthy lately, no meats hardly at all. got down to my goal weight finally though! this time around, we came up with a pretty goof recipe i'd like ot share with yall:
Gigantes - a greek recipe with lima beans-
My wife found this rather interesting recipe, if you like lima beans! She buys a bag of frozen lima beans and gets them thumping in unseasoned tomato sauce/paste and water with a littel bit of olive oil in it. Her seasonings include parsley, dill, garlic, onion, maybe some type of pepper...probably black pepper. It always comes out really good. Goes great with polenta or cornbread to make a tasty light meal. She likes to put some cheese on it, just like in this picture:
Don't have a picture yet, but am working on a pot of beef stroganoff to use up some leftovers. Rather than noodles, my family prefers it over rice or cauliflower.
Maybe this week, I'll do a slow cooking chicken enchilada recipe that I found.
