I'm on my phone so the diagram is tiny, but I don't see where coil power is going through the cluster.

I *do* see power from the switch going to the fuel injector cooling fan, so I think this diagram is for an I-6.
You could just use *either* the TFI coil wire *or* the DSII coil power wire on the DS inner fender to trigger a relay for your HEI, and then it would work with the key

Okay. Yeah I'll have to decipher stuff in a bit. I think this diagram is an "in general" diagram for all trucks/all engines. Cause this one also has a 4x4 switch and other stuff on it and mines two wheel drive, plus the other page that I have has all of the EFI wiring. So I think it's just a combo of all.
Page 29 and figure 20 on page 46 show your 5.0l as it should have come from the factory.
Hopefully most of these connections are still there.
Easiest would be to pick up circuit #20 W/LB near where the coil used to be and bring it over to the starter relay.
Mount an ignition relay next/near to that and bring power from the new ignition relay back to your HEI.
But I have no idea how much, if any, of the original harness was hacked out by the person who swapped in the carb and HEI.
The idea of a toggle ignition switch makes me think too many beers and not enough brain cells were involved
