Original motor?
The short version of the story is, the motor was allegedly replaced with a new one by a quick lube place after they screwed up service and caused engine damage.
The engine looks relatively new for a 2000 and I'm wondering if there's an easy way to tell if the engine was actually replaced or if it's the original engine.
I had contacted Ford with the VIN and they have no record of the engine ever being replaced on their records.

Paperwork or the ability to contact the quick lube place and talk to them about it would be your best bet. If the owner lost the paperwork to such an important event in the truck's life...then you have to wonder about the rest of it's history.
Re-manufactured or rebuilt engines typically have heat tabs on them. I would poke around the side of the head and block or the front of the heads to see if you can see a type of heat tab being placed on it.
If it's a used engine from a wrecking yard or another truck, it would be hard to tell.
