Hydraulic valves are 'maintenance free' but in reality you can back off the rocker retaining bolts and then go through the firing order, tightening each 1/4 turn past seated (or to 20ftlb) as that respective valve closes.
The carburettor will vary depending on model. For this you are best to reset to factory specs - Holley carbs are 3/4 turn out from seated for idle mixture screws and the idle set to 1/3 of the transfer slot showing under the throttle blade, plus your float height set to roughly 1/2 inch gap between float and top of bowl when removed and held upside down. I would recommend stock jet and power valve sizes if unfamiliar, otherwise simply renew the accelerator pump and power valve with known good units and replace what was originally there.
Ignition should be in the vicinity of 10 degrees before top dead center (BTDC) - again this will vary with engine and camshaft fitted. Some engines run best with lower timing, say 5 degrees BTDC, and other like more. See what yours likes.
Check your points gap if running a points distributor. Also check your spark plugs - a .040" gap is often recommended but if you have electronic ignition or hot coil set it for about .060" for a stronger spark.
Oil and filter change... and you're good to go.
