Do I have enough truck for this camper or should we be looking at a smaller camper?
You should be fine with that rig. I tow my 2017 sandpiper 389rd and it's 42' and 12900 empty. 15500 gross. My truck pulls it and stops it with out an issue. I have a 2017 F250 with airbags and the camper package.
Other than it staring at you in the mirror, you will not even know it is back there. I would/could pull that trailer with my 17 year old 7.3, you will not have any problems.
The truck will have no problem hauling that 5er. Be aware that you will most likely exceed the @#$& yellow sticker on the 'B' pillar though. If that is of no concern, go for it - I did
You drive around the beautiful country of ours and you will see thousands if not tens of thousands of 5th wheels that size or larger being pulled by F-250, Chevy 2500, and Ram 2500 series trucks. I have never heard of anyone having problems because of the weight of these trailers. Nor have I ever heard of anyone being stopped by any law enforcement authority to check to see if you are within the weight limits of your truck. You have a lot of excess capability there. Use it. Enjoy it. We have a Cedar Creek RV Owners Club where many of the trailers are in the 36 to 40 foot range being pulled by trucks like yours.
