Well my truck will be at the painters for 2 months. They will be assembling the body on the chassis & running gear I've been preparing. I have a few weeks to make a list of all that remains to do. I'd love it if y'all can chime in if I have a glaring oversight here.
Bare minimum to drive under own power
Wiring harness
Wiring mod for underbed tank
Run brake lines & bleed
Run fuel lines
Run vacuum lines to brake booster & distributor
Run heater lines & intake manifold water jacket
Install gauges, voltage reducers, dash switches
Install headlights
Install steering box rebuild kit
Rebuild shift tree
Clutch & shift linkages
Install door locks & cylinders
Bolt seat in
Install windshield & rear glass

Windshield wipers (used to be vacuum, does wiring harness cover them?)
Install vent windows & door glass
Fix horn button

Domelight (I think there was one)?
Headliner
Door panels
Soundproofing/Insulation?
My thoughts - you may have already included some/all of these items:
Turn signal controller/wiring
Steering wheel rehab
Rubber seals/gaskets for body reassembly
Exhaust line/muffler
Spare tire carrier (this may go away with the tank relo)
Floor mat/fire wall cover - especially if you have a sound deadener installed
12V bulbs
