Sounds like Abe Lincoln's Axe although struggling to follow exactly what you want in the end.
If it was me I would just broaden the search and find a 7th gen ext cab.

You can't put a extended cab on a regular cab frame unless you use a body lift. The frame kicks up right after the cab, and there is a larger area before the kick-up on a extended cab frame. So unless you use a body lift to lift the extended cab up over the kick-up, it will hit the kick-up on the regular cab frame.
You could buy a later truck extended cab, and swap the 80-86 frontend onto the later truck. It would still be titled as a later truck, and have everything the later truck has except it would have the earlier grille and fenders. You can do it if you make some little brackets for the lower rear fender bolts, and you will have to do a little wiring for the different headlights, and you need to use your diesel radiator support if you want to use your diesel radiator.
