thinking of another 302 ... crate engine... Also upgrade cooling system
Just throwing it out there
Any suggestions on engine and who to buy from ?

Reason: More info
Imagine it's a matter of preference. As a daily driver, personally I prefer my 65 with the 302, at 18 mpg, over the 65 with the 390 at 10 mpg, that's with a tail wind. It's been the family daily driver and work horse over past 30 plus years. Purchased a created 302 long block from an engine re-man, out of the state of Washington, 8 years ago, primarily because their warranty, 7 year, or 70k miles. Regret I did not purchase the later model 302 where I would have had to option of going with roller cam, and/or fuel injection. Seem to recall delivered ran around $2000.
Anyhow, had an urge to chime in, interested in what other member's comments.
I would look at auto wreckers for a '90-'95 fuel-injected Mustang engine and OD auto. A lot of those went off the road backwards without harming the pieces you need.
427 side oiler with the cammer heads. You get there faster thus not having the engine running for as long (yes I am being sarcastic). A 302 is a nice all around engine with good V8 rumble, but if mileage is all you want don't overlook the fuel injected 4.9L 300c.i. six cylinder. Overdrive trannies and highway gears help the mpg, so do you have any hills to get over?
A 302 with a t-5 tranny would work well with decent fuel mileage. You can run really about whatever you want though. My daily driver and only vehicle is my 64, it's got the 292 y block and 3 speed on the tree transmission. If my old set up will work then I'm sure a 302 will be just fine
Look into an over/under unit that bolts to the back of the automatic. That way you can have your BIG motor and mileage also. Not cheap but sure are great.
if it were me id go with a 92-96 302 with a 5spd od, or as youve got an auto the auto with od,of course you could go with a coyote 302...but i think there out of hand on price... wheres as you could get a 90s 302 and tranny with less than 200k miles
and do a full or semi beef up and rebuild, just my 2 cents
Suggested 302 since it would be a matter of swapping same engine; having said that, imagine the 351w, or possibly as member mentioned the 300ci may not require major modification, possibly a direct bolt-in?
I owned a later model Ford truck with the 300ci. although it was bullet proof, seem to recall MPG was not all that great?
I'm running the economical 390 with 3.50 gears, before I laid her up she was getting 13 mpg consistently, it's 4 wd so I'm going to go with 3.00 gears when I get her back together, hoping to achieve 15-18 mpg.
If you're running 2wd and are looking for a sport truck, I'd go with a 351W, more bang for the buck.
