Have you visited the 7.3 forum here at FTE? Those guys there will learn you everything you ever wanted to know (and more!) about that awesome oil burner. Do you have a set of gauges to monitor the vitals?

For the intake, stay away from K&N, or any oil based filter. They tend not to work so well on a turbo application as the higher boost and airflow can de-oil the filter onto your compressor wheel and such. 6637 or a Ford AIS are good choices. Gearhead is by far, IMO, on of the best tuners out there for the 7.3. Matt and Lars know their stuff and are great to work with, I'm on revision 8 or 9 on some of my tunes, 12 and 14 on others - all free.
Look into throwing a 6.0 trans cooler on it too, bolts in and some 1/2 to 3/& line adapters and you're done. WAY better cooling capabilities over the piddly little 7-row 7.3 cooler, which, coincidentally, is also the smallest cooler out of all engine options for the Excursion.
Finally, does it have gauges or any monitor program? In stock configuration the tune doesn't really require anything to be monitored outside of trans temp if you're towing. With a tuner, you generally have some things you want to keep an eye on. Gearhead is good about EGT management via tuning, however the hot tune can bring the EGTs into the high side of you rail on it hard and long enough. More of a precaution than a necessity, but still a good thing to have.
