I've got a 2000 excursion. It's runs great. For a while. It's always random. Sometimes after an hour of driving sometimes 15 min. But it start cutting out and losing power and eventually won't pull its self anymore after about 5 miles after it starts acting up. I originally thought relay since I had low pressure at the rail so I disconnected the battery popped in a new relay and she was good to go. Then it started again a few days later. Usually if I just stop and unhook the battery let it sit for 5 min it's fine for another 20 to 40 min or sometimes 10
I mean, if you have low pressure at the rail, I would think that the fuel pump would be the cause. Have you changed the fuel filter recently? A clogged filter could also cause this, but it would have to be really clogged.
If it is the fuel pump, it's going to die on you at the worst possible time. It is very straight forward to do, search this forum for "Fuel Pump" and you'll find several detailed how-to guides. Hardest part is the weight of the tank itself.
I think the Ford manual states that working pressure measured off of the fuel rail is anywhere from 28-45 PSI. What are you getting?
How many miles on the rig? V10s use a ton of gas, so the pump works harder. Some people believe that the gas helps cool the pump down, so it is best to always keep as much gas in the tank as possible, though that might be an old wives tale.

I don't think there is a code for intermittent low fuel pressure.
You need to find out what the fuel pressure is doing.
I use an adequate gauge from Harbor Freight, #62623, $16 with a 20% off coupon.
