I have a flathead V8 in my '49 F-1 and I don't plan on running a heater. Initially, I just cut the hoses and put a coupler in between, creating a loop. Would I be better off just plugging the heater hose ports on the water pump and head?

Probably best off just using brass plumbing fittings? Happen to know what size? Or do the usual suspects sell fittings made specifically for this purpose?
They're just regular NPT holes as far as I know. Brass would be good, with a little anti-seize in case you change your mind.
The tube on the head on all the engines I've disassembled is just a bear to get out. Even the machine shop gave up, said the only way to get it would destroy it (which you may not care about). Heat it up good.
