351w build

Hey all
New member here.. got my 90 F250 home finally (see my member introduction post)

Anyway.. I tore the motor down yesterday (it was locked up tight) It's pretty obvious the drivers side head gasket was leaking severely along with the intake gasket. 4 of the intake bolts snapped with very little torque.. and the #8 piston is flaking real bad.. chunks of metal just peal off of it..
So it will be going to the machine shop this week. Just a mild build nothing extraordinary. Id like to get another 100k out of it.
I originally planned on building a carbed motor and dropping it in (its currently EFI) but after reading numerous posts on this site i decided to keep the EFI set up. It will ultimately stay stock..
I have read that the E7TE heads/flow for this motor are less than desireable so I will have the heads done as well.
After all this rambling i will now get to the question..
I would like to put headers on this build.. long, short.. what ever works..
The current manifold set up has 8 tubes that come out of them and route behind the intake manifold. The EGR? valve is also on the front of one of the manifold. Im assuming this is the EGR system
If I remove this whole system by putting headers in. What kind of issues could I possibly be looking at? I do not live in an emissions state so im not worried about that.. I know the engine and trans are all computer controlled.. This is my first newer motor build so go easy on me

After spending most of my day browsing this site.. I found my answer... time to go shopping..

Fwiw, e7s being less than desire able is an understatement
