Hey there rwr and welcome to FTE!
Since you've stripped it down, can you get it somewhere to be sandblasted or bead blasted? The best finish I can recommend is powder-coating. Never chip, flake, or peel. Smooth, and dirt, salt, mud etc., washes right off. Comes in any color you want. And it doesn't cost anymore than to have it undercoated by Ziebart. It's heat cured, so you'd have to remove rubber items.
Undercoating can be applied by spray, and it takes about 72hrs to fully cure, so you can't work on anything in the meantime. Even then, it's suseptible to being scaped off fairly easily.
Painting, you'll have to do alot of sanding, grinding of welds. You'll need to prime it and paint, but it's still suseptible to scatches, peeling, flaking.
After all that hard work of getting the body panels off, you just want to spray paint it. I promise not to make you feel guilty! HEE HEE! It is hard work, but you only want to do it once right?
I have seen a guy who sanded his frame down to bare metal, and used an epoxy compound on the frame. After that he painted it. He went at least 3 years of harsh and salty northern winters without a spec of rust. I don't know any of the brand names he used though.

Paint is ok, if you don't have to contend with the harsh weather conditions. I'm too lazy to do something like this more than once! HEE HEE!
I really think the finish of the frame should be just as good, or if not better than the exterior of the body. I wish the manufacturers would see it that way!

Another excellent example of the amazing qualities of epoxy.
I'm probably going to be alone on this, but I power washed my frame and then covered it in undercoating- the spray can stuff like you find at Wal-Mart. I don't really care what my frame looks like though.
went ahead and sand blasted the frame, found a epoxy paint that they use in the salt mines around here, I figure if it can resist salt it ought to just about resist anything I get into
I just thought of somthing else you can use... There is a bed liner called LineX http://www.goline-x.com
I know of a few people who are using this as an undercoating. You can color match it to match the color of your truck or pick a cool color of your own.
One good thing about LineX is that as soon as it is sprayed onto your truck it is dry, and it does not require heat to cure.
I would check it out and get some prices... If you do, please post prices that you found.
