Is the EGR valve plugged in still (directions below)? Even if the cooler is deleted removing the valve can cause issues with the fan operation. Are you saying it's overheating because the gauge on the dashboard is pegging?
It's an up-front investment that will protect you from being ripped off. If you get one and post the values that we ask for, the disagnostic ability of the forum is pretty impressive, up to and including some people who work full-time repairing Powerstroke engines.
I prefer the DashBoss if you use Apple products or Torque App if you use Android. Many people will tell you to get a Scan Gauge, but having used one of those originally I think it's capabilities are limited and it's much more difficult to use compared to the smartphone products. If you really want to burn some cash the Edge Insight CTS2 is pretty awesome. If for example, you get a DashBoss, you can post screenshots you take with your phone to the boards here, and we can look at the data and point you in a good direction, either for you to look at or for you to pass on to a mechanic.
The first thing I would so is see if the EGR valve is installed, and plugged in correctly. This being unplugged can cause the fan to not operate correctly, leading to your overheating.
