I don't have the OEM part number, but I need a PSP pulley. I've tried all the local parts stores, LMC, Dennis Carpenter, Dorman catalog and JCW. No Joy!

This is yet-another area where it is best for the owner to choose since a lot of info is needed. For instance, 2wd vs 4wd, and A/C or not. Assuming W/o A/C it looks like you need EOTZ 3A733-G, and that it may be marked E0TC 3D673-GA. If you have A/C you can pick the #'s. You will need to Google the part number, but that # will not be stamped on the part. What may be on the part is the description #.
Thanks Gary for listing the part numbers. I need the HA version. Using the number I need, I called the local Ford store. No Joy. The number is still good but no Ford dealer in the US has one. 'Recycle' yard or ebay for me. No sure what if I can't find one after that.....?

The difference is probably only in the OD of the pulley. Ford changed the diameter to keep the power steering pump in an optimum RPM range given what they expected the engine's RPM range would be due to the engine, transmission, and other details of the truck. For instance, the 300 six is a low RPM engine as compared to a 302, so they will have geared the PS pump to accommodate that.
My guess is that you could get by with any pulley, but the best bet would be from a larger engine because it will also be expected to turn more slowly.
On my truck and other V-belt trucks with factory AC the power steering pulley V-belt is moved to the center location and the AC is in the forward V-belt groove.
Moving the belt is done with a different PS pulley. In the photo below the gap between the PS pulley and the mounting bolts for the PS pump is very close, maybe 3/8 inch or so.
So is your truck V-belt setup like this photo?

1980/86 F100/350 2WD 300 I-6 with factory installed integral A/C (all 1980/83 F100's sold new in US/Canada are 2WD).
No Ford dealer or obsolete parts vendor has any.
(sigh) Clueless ebay seller with C7AZ-3A733-A (replaced C5AZ-3A733-G) .. P/S Pump Pulley was used 1965/77 in I-6 & V8 cars/trucks with Ford/Thompson P/S pump with steel reservoir.
It will not work with Ford C-II P/S pump with plastic reservoir introduced in 1978.
