I went with the rosewood stage 1's recently with stock turbo but t-500 hpop, and I am loving the power. Went to Portland, OR and trailered my father in laws 93 explorer back to walla walla, WA. set the cruise at 65 mph and my egts never went above 900* (dp-tuner 80hp tow) but if I wanted to pass someone I could. Granted it's not a ton of weight but a big different from stock. My set up if perfect for me, for now .
You could go with the 180s... When the turbo goes out, it would be a great excuses to upgrade!
To go 180's you should do studs, springs, pushrods, e-fuel, IC, custom tunes, t-4 kit with s frame turbo, intake, full exhaust the and clutch/built trans. So your 2k injectors just turned into 15-20k
It all depends if you are staying with a stock turbo. If you are then 160 is about right. 180 and it can push the stock turbo harder than it really needs to be pushed.

Also excessive boost levels will damage thrust bearing and elevated boost levels indicate operating out of the compressor map resulting in decreased efficiency.
The large part here is having a goal and plan to obtain the goal set fourth
