With a threaded coil over shock changing the lift height is a matter of adjusting the collar.
Adjustment range will depend on the springs free length, longer or shorter springs are easily interchanged.
I concur that the way that kit is shown is pretty lame, if you are going to that level of expense then get the new leaf springs they offer.
If you go with a lifted setup I would make sure there is a method of adjusting the castor.
Some of the kits ( like the one you first posted) drop the radius arm bracket down as a "correction" but that doesn't always equate to the proper castor.
