bearing break-in lube?
Nothing is needed specifically for the bearings . Just prime the system .
Most of the parts houses still sell SH and SJ rated HD 30 wts though. It would be a good idea to use some for the intial run if possible then change the oil and filter to remove some of the debris it has in it from the build .
It does not sound like anything was replaced like rings , cam ect , correct ?

bearing break-in lube?
Some shops sell break in grease that you can apply to the bearings, especially the cam bearings and lifter surfaces and cam lobes(If you replaced the cam).
In a pinch I use STP, the thick gooey stuff for assembly lube. Just goop a little on each bearing and then torque it down.
