I mightta missed it but you're staying or going with a 28-spline for the Dentside housing?

31-spline axles will be around 30% stronger than 28. Having beefier parts is more desirable but the 28-spline Dentside axles will hold up to the same use/load you've always put on the truck.
Unless you're doing something majorly different with your truck, after the rear end swap, it should be fine.

The purpose of the copper crush washers is for added sealing around the housing-to- 3rd member studs (helps seal against the gear oil from seeping out from around the studs). 3/8" I.D. brake hose washers will work for this application.
Many people, because they don't know what they do, don't replace the gaskets between the axle housing flange and the back of the backing plate and between the front of the backing plate and the 4-bolt stamped steel axle retainer. Their purpose is to keep the small particles of abrasive brake shoe dust from working their way into the axle bearings.
