I finally got my Excursion ready for a 5 day camping/fishing trip to Cape Lookout in the Outer Banks (OBX) here in North Carolina. My Excursion is a Limited V10 with 190k miles and runs like a champ (with plenty of preventative maintenance of course). Both the front and back rack are "Pro Series" 2'X5' that I purchased from Amazon for ~$130 each. They are the largest and cheapest I could find, they are better built that I was expecting and am really happy with them.
The back rack has a dry box that I built, it's about 20"x20"x24" tall. The two coolers are igloo 54qt that fit perfectly, one for food, one for drinks.
The front rack is mounted on custom receivers (unfortunately don't have pics right now) one mounted next to each two hook. The two receivers accept 1.5" tube steel on each side that gives plenty of side to side stability and load capacity. I then mounted a 2"x10" treated board to the front for a handy bench, PVC pipe for rod holders, and 1" EMT conduit clamps for anchor points. As you can see the rack holds a lot of stuff. That is a 150qt igloo cooler, two chairs (behind cooler), four sand spike rod holders (behind cooler), small bucket, tackle box, 7gal water container, dry box wit tools, shovel, and a fire extinguisher JIT; plus it can fit my 225b hind-end with no problem.
As for sleeping, that's what the back of the Ex is for! I took out the second and third row seats and put a queen air mattress that was perfectly comfortable for my wife and I.
I was a great trip with perfect weather, but not enough fish! My Excursion is ready for prime time and I will be back often.
