Cooling problem

Ok guys, I have a 89 f150 custom that I put a 89 mustang ho motor in. The motor is stock except for a weiand stealth and 600 eddy carb. Anyway I saw on here somewhere that you can't use a standard rotation timing cover with a reverse water pump. I was wondering why? And can I use a reverse timing cover with a standard rotation pump? Because that's how I have it running but it seems that it runs a little hot. I have a 180 stat but it runs about 190 and when I put my foot in it the temp goes to 200-210 and when I let off it goes back to 190 could this be because of the timing cover and pump? Also it has new pump,radiator,stat,hoses,cap. It's even got a 4 core radiator I just can't figure this out any help would be great.
