I just had a bunch of work done on the engine of my 96 f250 7.5 v8 460 and now whenever I'm going up hill, my air conditioner stops blowing from the vents and after i get back of a level ground it starts blowing again. Any idea what it could be?

I assume it starts blowing out the defrost when it stops blowing from the vents. You sir have a vacuum leak. The doors are held in place by vacuum and when you are going uphill there is a low vacuum situation. There is a vacuum storage canister so you can still make changes as needed during that time but if there is a leak in the system once the vacuum is depleted the doors go to their default position which is defrost.
I noticed today while looking for a leak i turned on the truck and the AC and then shut it off and i did hear a hissing sound coming from or around the AC but i couldnt feel or find any air or coldness coming from anywhere.
According to Alldata you have from the vacuum distribution a hose that goes to a vacuum check valve, 1 port in and 2 ports out. From there one hose goes to the vacuum tank and the other goes to the AC control selector. It could be a faulty check valve leaking internally and not a cracked hose. I don't know where these hoses run but usually it is towards the passenger side of the engine compartment.
Just went through the same issue as yours with my Bronco. I ended up disconnecting each under hood vacuum line one at a time, trace the line to its other end connection, unplugged that and used my MityVac to test each line for vacuum loss. Never would have found my deteriorated vacuum line without doing it the way I did. Replaced the one cracked line and solved the problem. I'm betting whoever did your under hood work either left a vacuum line disconnected or managed to crack one while they were working on it.
I had new intake manifold gasket up on and new thermostat and some pulleys and tensioners and thats when i started to notice the ac stop blowing. Thanks for the help
