"The trinity or complete family is seen in the three highest cards, which are the king, queen, and jack or knave. ‘Knave,’ like knabe in German, means ‘boy.’ Therefore, in cards, we have the father, mother and child, the natural trinity or perfect family."
I always thought it had to do with the militia or something. That link has some intersting answers about cards.

...Cool, I'd always thought the jack was the man servant to the queen...ie jack of all trades master of none, jack was the "go to guy" to get stuff taken care of...
