The controller makes the light change. As the temps rise, the controller ads voltage to the fan motors. This makes the light change colors.

If I go the dcc route which model should I go with?

I went with the FK-95 controller. It was only 10 bucks more and has a larger heat sink. That way no matter what fans I use, I'll always have enough juice. The L101 indicator is super nice to have, it lets you know how things are working. And the TADJ module lets you adjust the temps on the fly. This is a super setup and I have to thank FORDF250HDXLT for introducing me to it.

I have been doing more research on the dcc controllers but hardly see anyone using them on the windstar fans. Will the fk-45 be sufficient or do I need the fk-75

The DCC controller will run almost any fan out there. Some may need the resistor installed to work correctly, which is like an extra $10 or something like that. It seems like on one of the pages I read, it mentioned Windstar fans, but I can't remember what it said about them. The 3 fans I am running pull about 42A wide open so I would say Windstar fans would pull less. The FK-45 would be sufficient to run them, but for just a few $s more you can upgrade to the FK-75 and you know you would have plenty of power. I went with the FK-95 because it was only a few $s more than the FK-75 and had a larger heat sink on it. DO go with the 10ga wiring he offers. His wiring is some kind of wire I have never seen before and looks to be super high quality, as are all the ends.

I found the info about the fans. It is in the troubleshooting section of the installation guide. It says that Ford Contour fans are the ones that have the "low impedance" type motor and need the resistor. Windstar motors are probably good to go.
