about to pull engine - what do I do with it

OK. I am about to pull the engine for a number of reasons:
to facilitate installing new steering colum for automatic trans upgrade;
to make it easier to install power steering upgrade;
not sure it will help with the installation of the C4;
to do some clean-up work in the engine well area;
etc.
And most likely to leave the engine with a machinist to rebuild (most likely from a 240 to a 300 while he is at it).
I have pulled the intake/exhaust manifold, carb, alternator, radiator, radiator support, grille and hood. I have lifted the engine, but realized I did not have the right length bolts to attach to my engine stand. So I set it back.
My questions are, can the engine sit on its oil pan without a problem (for transport in the back of my 69 f100); I was thinking of fashioning up some plates to cover the back end and exhaust/intake ports and pressure wash the engine and is there a problem with that (if it is going to be rebuilt do I even need to do that).
Also, I had planned on rebuilding using an EFI exhaust manifold(s). However, it looks pretty unlikely I will successfully demate the exhaust and intake manifolds. Are replacement manifolds pretty readily available (I ran across the exhaust manifold in my catalogs but have not searched much for the intake.

engine pulled yesterday and hooked up to engine stand. Will be calling rebuilder today to see how much I need to disassemble and whether or not he "deep" fries the engine for cleaning. Need to know how much clean-up I need to do.

looks nice I see you got it figured out but I had the same problem with the bolts I ended up throwing a old tire under it to support it (no rim obviously) till I found the right ones

Well I used my intake/exhaust manifold bolts for the chain connection on back and I had found the right bolts with a washer for the front connection. I still used a small length of chain to pull the front connection towards the water pump/thermostat cover to straighten up the engine.
The engine sits in San Antonio at Craig's Machine Shop. They said they were about finished with the block and were waiting on some information about the upgraded crank and pistons.
Today did receive my Y-pipe for the EFI manifolds and I received the offy intake heater this week as well, but likely won't use it immediately. Cleaned up the mounts for the 1985 power steering pump and the cooler and have cleaned up and roughly painted the engine mounts (gotta remember which one goes on which side). Other parts received include the 3-groove harmonic balancer and three groove water pump pulley along with the upgraded water pump and also the thermostat housing. Pump and housing have been painted.
Ultra has been a great source of information for the power steering swap.
