Hard to help decide between a 2WD and 4X4, or one ton and 3/4 ton without knowing more. Where I'm at in WYO the 4X4 would win if it could haul enough weight. I need to trade out my 1/2 ton in a few years for a heavier truck.
Hands down the 08 and delete the DPF. Good motors without the DPF. It's a 4x4 too. You still get the updated interior that is very similar to the new ones. Even though I have a 2015, The 08-10s have the best front end. The 08 has more total miles but way less miles per year so it was driven less.
i am looking to buy a new toyhauler, but i do not see a huge difference between towing capacity between a F250 4WD and a F350 2WD with SRW. If it was a dually maybe then.

I could use the EGR delete and a tuner, exhaust and intake to get better MPG
I had an early 2011 6.7. Quite honestly the mileage wasn't that great. Not for the additional expense, cost, and complexity.
The 6.4 with DPF removed, ECU flashed to disable DPF and regen would probably get pretty decent MPG. The emissions control on these new diesels probably choke the MPG down by 25-30%.
08 F250 S/B with a 40 ft Toy hauler is not a good idea.
11 F350 would work if you don't need 4x4, BUT I would not buy the first model year 6.7, and chance getting one with valve, heads or glow plug problems.
I looked up the specs and there is no significant difference in tow capacity for a fifth wheel between a F250 4x4 8ft bed and a F350 2WD 8ft bed with SRW. If it was a dually it be different

I agree keep looking I would never buy a 2wd truck along with having the possibility of having a bad valve or the glow plug tip breaking off on the 2011 and it's right around the milage where it seems to be happening. I would also pass on the 08 if your not going to delete it you will get crappy fuel milage and very expensive to fix although they will both be expensive to repair if something goes wrong the 6.7 will get better fuel mileage than the 6.4. The 6.7 has proven to be quite reliable aside form the the problems in the 2011's and the nox sensors. If I were you I'd look for a 12-15 6.7 w/ a long bed it will make maneuvering your trailer easier.

YES they are rated to "tow" the same, BUT what you are missing, is the GVWR and Payload capacities, which you also have to look at to tow "legally"
With a 12-14K 5 fifth wheel, you are looking at a pin weigh around 2,400-2,800 lbs. That pretty close on a F250 (payload) if not over by time you add people, fuel etc. to the truck.
