I'm not sure I understand. You don't believe anything Ford says? They give tow ratings for all of the engines that show the 2.7 is less capable than the 3.5. And there are noticeable torque differences - again published by Ford. Why don't you believe them?
I guess it depends on what you are towing too. If you have a little tin boat, you probably won't notice much difference. With any TT or other trailer that cuts a lot of wind, you will for sure notice the difference.
I'm sure you'll notice a difference, but the question is how much overkill you need for the trailer you pull. The 2.7L EcoBoost has more horsepower and torque than the 5.4L V8 in the previous generation trucks. Those were rated to tow as much as 11,000 lbs.
I've towed trailers from 450-62,000 lbs and have never had more than 435 HP under the hood. The 2.7L EcoBoost has more than enough power to safely move 10,000 lbs on public streets. It's not rated that high, but there may be durability or cooling reasons behind that. Unless I was planning on towing more than 9,000 lbs I would pick the 2.7L engine.
