So it starts and idles or did.. Air in air out and fuel..Any popping when throttle up? Lean?
Put the old computer back in..At least for now. Get it idling. make sure nothing blocking intake or exhaust...Where are you? ice in muffler? Maf controls most of the fuel during throttle up so keep a thought on that. Mice build nests.. don't need o2 sensors to run in the first minute or so its relying on AIT and CT sensors so if you start and go will it go? As far as coolant sensor being off thats scary huh.
Just thinking out loud hope it helps. Give us some more symptoms...oh start for 20 secs check heat on all manifold outlets for run on all cyl's.

Why continue taking surveys here? Do you have a service manual for this truck/engine? That would be my first investment if I were you. Ford has specific trouble shooting procedures to follow which will save you a lot of time and money.
I don't see where you drained ALL of the old fuel out and started new. Possibly diesel contaminated, possibly water in it from sitting around a long time (uhauls do that) and who knows what else could be in there. I would clean out the tank, then use the pressure test port and let the pump run fresh gas at least up to the rail then see what you have.
I didn't think it was possible to put diesel in a gas truck, since the diesel nozzle doesn't fit in the opening of a gas filler neck. Or is that a state-by-state thing?

This was a u-haul truck so there is no telling how it may be set up.
