I was under the hood today just checking fluids and I noticed that it didn't seem to have a radiator cap (I mean on the radiator itself, not the reservoir). Do these trucks not have a cap on the radiator? Or did I just not see it?
There should be a cap there somewhere. Look at the radiator hose. I can only imagine how long it would take to fill the radiator after a coolant change without one.

So If I ever need to run a pressure test on the coolant system can I hook the tester up to the cap on the reservoir?
Yes. The degas bottle gets pressurized along with the rest of the system. If memory serves me right the stock cap is 16psi. You can hose flush the coolant system from the degas bottle as well. I made an attachment out of an old degas bottle cap which I hook the water hose up to so I can flush the cooling system.
