The problem is that Ford marketed the EX to soccer moms and because of that targeted audience they gave them soft springs that rode 2" lower than their cousin Super Duty pickups. The shorter springs allowed the EX to fit into more residential garages and the mushy springs gave the soccer moms a cushier ride.
When my EX was still all stock I towed our 9500lb toyhauler and it was nearly undeliverable, the high TH tongue weight (even with a 1200lb WD setup) would push the rear of the EX around so bad it would try to change lanes on downhill curves. Not fun. I think you should take the small TH out for a test tow in your local area before the first trip just to see what you have as a starting point.
Now do you think air bags and a 1 piece block would help that? I know exactly what you mean by the mushy ride and the trailer pushing the truck around. Had the same problem with a stock f150 fx2 towing 8k but the bags cured that

I'm sure it would be better but I don't how much better........ The bags will cetainly help to support the load but I don't know if or how they would impact the axle wrap and rear steer from the trailer pushing the rear around.

So I guess I need to be looking into B code springs asap. That's pre 04 f250 right? Im thinking they can't be too expensive and shouldn't be hard to find either

Actually it's up to about '07 or so, I think it was in '08 when they started to put the longer rear leaves on the pickups. B code or C codes are a great option, I run the Bs with the common mod of the thicker in between leaf spacers and the bottom 2 EX leaves added to the B pack. In addition to that I also use the taller tapered blocks (approx. 4") from an F-350 and for a little extra lift I then cut my stock traction bar up and used 2 sections of it between the pack and blocks. This setup on my EX gave me just over 4.5" of lift and made the whole towing experience worlds better!

I've got some researching to do. I'm thinking about keeping stock spring and adding air bags and a track bar so I can keep a smooth ride then air up the bags when it's time to tow

The truck weights 7000 LBs EMPTY. It rides & drives GREAT with the B-MODs

That's a good point. I forgot what a heavy pig this thing is. I found a set of used springs off an 04 f250 for $200. Anything I should be looking for when I go check these things out?

If the donor truck is still around you can verify the spring code by checking the door sticker, under springs it will have something like "VVBB" showing that the truck was built with V codes up front and B codes in back.
Just look for cracks in the leaves and overall general condition, they may or may not have a top overload leaf. If they do you will be removing it anyway to protect your rear AC lines and then some of the goofballs here use that top overload leaf as an extra leaf added to their front springs.
This shot shows one of my stock B codes pre-mod at the top, then one of the stock X code fronts in the middle and the bottom spring pack is my modded X code with the top overload from the B codes added to the pack.
