Temp Sender

I finally got my 54 back on the road after a years worth of safety adjustments/mods. I had replaced the temp gauge and sender on my stock 272 with ones from Mid50s and noticed on startup that the gauge is almost full scale (hot) before the thermostat opens. Mid50 says that mid scale on their gauge is 160 degrees - I have a 180 degree thermostat and want my electric fan to start at 200. Is there a way to make the gauge read mid scale at 180 vice 160?
