2000 U-Bolts
I have been tossing around the idea of removing the rear blocks on my factory height, four wheel drive F250.
Where would the best place be to get replacement u-bolts and what is the torque spec on those when reinstalling?

We have plenty of U-bolts that we make here from straight rods every day. The torque specs will vary depending on where you get the U-bolts from, the material being used and also the grading.

Recommended U-Bolt Torque, Suspension Replacement Parts
In your case you would have a 5/8" diameter rod - Grade 8 Unplated, so right around 177 ft lbs.
