The 17" rim and factory 265/70-17 tires have a greater diameter than the factory 16" rim and 255/70-16 tires. The greater diameter of the 17" setup effectively creates higher gearing for the vehicle vs. 16" setup. What does this mean? The engine has to struggle a little harder to pull your rig, particularly when accelerating from a stop or from low speeds.
The best performance in terms of acceleration will come from the 16" setup.
OTO, I would try to find out if the weight capacity of the tires favors the larger 17" setup.
I wouldn't trade my 17s for smaller because of the extra ground clearance offroad and in pulling the trailer i have up steep RR tracks or service station driveways. The 3.73 diff does just fine pulling my 5K lbs traavel trailer off road or in steep mountain passes like Wolf Creek, CO. I think you will be happy with your new truck as is.
