Thoughts or suggestions....
I want to upgrade to an '08 tailgate with factory camera and a touchscreen head unit (BT and camera ready) for hooking up my bumper hitch trailers but also am thinking about mounting a camera up by the third brake light for hooking up gooseneck/5th wheel hitches and would like possibly to connect both to the touchscreen and be able to switch back and forth, or should I add a second monitor for the bed camera?

You'll need to see if the headunit takes two AV inputs. Then you can switch between the cameras. I would put the tailgate camera as the backup camera, then put the high mounted one as manual switchable.
Of you could find a RCA switch and put that somewhere, and switch between cameras with that.
