When I went to a two speed fan, I used Napa part number ECHFS151. I dont know what it came from, but I tapped a hole into the thermostat housing and put it there. The low speed went on at 190 and the high speed came on at some other temperature that I can't remember. Napa even sells the connector for it so you can make it look clean and factory.

That was a metric thread, straight I think, that was sealed with an aluminum washer.

A fan switch from an 80-something 4-cylinder Mustang may be an other option that would fit into a 1/2" hole if there's one somewhere on your block, but it's been years since I decided not to go with one and I've forgotten the temperatures on it
