If all the lifters removed easily and look good on the surface that runs on the lobe you probably don't have any problem. When there is a problem the bottom of the lifter usually mushrooms and they don't want to come out of the bore. The lifter only runs on a small area of the lobe so any wear on the lobe will be on one edge of it.
The lifters came out nice and smooth, with a magnet. The bottoms of the lifters dont show any wear at all, they look brand new.
The story is they PO3 rebuilt the motor, didn't drive it much, sold it, to PO2. He drove it a bit, had planned on rebuilding the truck. Sold it to PO1 who parked it for several years, starting it about once maybe twice a year. I know PO1 and PO2, from what I understand, the motor has less than 1000 miles on it.
The latest pictures help a lot. They clearly show the valves to have the longer stem, and appear to be correct. I believe the '79 heads did use a different rocker, a stamped steel unit rather than the cast type you have.
From the above pictures I would say you have a correct combination of pieces and parts.
Disregard my rambling about incorrect valves.
Regarding proper valve lash. You definitely have positive stop rocker arm assemblies. As has be discussed earlier, there is no adjustment with this system, other than using longer or shorter pushrods.
Proper assembly of the positive stop is to install the various parts and tighten the rocker nut to 17-23 lb-ft (according to my source). That is it. There is no "zero lash + 1/2 turn" or any other formula. Just tighten the nut to the proper torque and that is it.
