just be glad someone swapped in a 460 you would hate to hear the fuel mileage of a 351m or 400 with that set up.... you can get better gas mileage out of it but its no where near as fun

i have a thing for mopar and jeep trucks but wouldn't even think of buying one unless i put a ford motor in it (kinda racist like that) closest thing i would have to a chevy (other than one i own and hate 76 1/2 ton 6-8 mpg tops 350/350 with 3.53ish gears no reason why it should get such ****ty mileage, and it takes a 8 point turn to turn it around on a 2 lane road ridiculous) would be like a cheby luv/izuzu pup diesel (friend has one that is a dually rear end under a short and narrow bed with a ford 302 wickedly awesome and leaves the cutest burnout marks you ever seen)
Are you certain that speedo gears are accurate? with such a big tire size increase, your speedo gears may be way off......Either way, your not going to get great mileage, the truck has big tires, lots of wind resistance, a big thirsty engine......at the same time, 38" tires and 4.56 gears are a pretty good match, have you taken a drive on a mileage marked road to be sure your not getting an inaccurate odometer reading in tems of miles driven?
