Think I figured it out. So I have a habit of shifting to N when I park first, then set parking brake, then shift to park.
I do this to take the strain off the trans, when parking on a hill and such. Well apparently if you don't go directly to P then set park brake it disables the remote start the next time you try it.
Probably some sort of safety Nannie that tells the comp the trans might be out of gear or in anything but park, so don't start.
I have only had that happen once...all I did was unlock all the doors, then hit lock and start twice and it started without issue. Don't forget you can adjust the amount of time your truck runs in remote start mode from 5 to 10 to 30 min. (who would ever run it for 30 min I have no clue)

i spoke with my dealer today and the sequence is just like you describe it. hit lock followed by hitting start twice.
