RW is here and we agree - the best is the spacer and a 4-hole gasket on top of it. But, in reality the open plenum gasket should work fine, it is just odd the open space.
If you want to do an off road mod to the carb put a piece of hose across the leveling channel in the back of the carb. This keeps the carb from flooding one side of the float bowls on an incline.

Is it worth removing the carb to install the open gasket? I'm sort of inclined to leave it like I have it and see if I have any vacuum leaks and only pull the carb back off if I do.

I removed the lines from bowel vents and capped the Purge valves like this.
The open style gasket won't hurt a thing. What you need to be careful about is the original thick gasket. It needs to be in very good shape with the plastic bushings still in the bolt holes(I assume it had these). If it's out of shape and you tighten down the carb, the throttle can get sticky. If your throttle doesn't move freely I would use the thinner gasket. The throttle being sticky is a sign the base of the carb is warping on the tall gasket.
