I have a 2005 F350 Drw mine was doing the same thing, so I flushed the radiator and installed a factory T stat ,and used only ford coolant also I pulled my radiator and cleaned all of the stuff in between the radiator and condenser .
I pull a 14k 5th wheel and a 3 place jet ski and when going up hills my oil temp is at 238 f and my coolant temp is close to 229 f but my trans get a bit hotter then I like it just around 200 f ,I'm checking the temps with a edge box

I had the same problem with my 2004 when I first got it. Mine was puking a bit but only when towing and pulling a steep grade. Without the trailer it ran great. Ended up being the head gaskets. After I got new head gaskets the coolant never blows out even when my coolant reaches 225 and my oil temp gets to 245+. It still stresses me out.
